We made these cupcakes Monday night just in time for Valentine's Day. They were super yummy, a perfect valentine treat.
Here's how ours turned out and the recipe.
INGREDIENTS
3/4 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
1 1/2 cups of sugar
1 1/2 teaspoon baking soda
3/4 teaspoon salt
3/4 teaspoon baking powder
2 large eggs
3/4 cup warm water
3/4 cup buttermilk
3 tablespoons safflower oil
1 teaspoon vanilla extract

Preheat oven to 350 degrees
Line muffin pans with paper liners, set aside..
Sift together all your dry ingredients
Add eggs, warm water, buttermilk, oil , vanilla, and mix until smooth
Fill baking cups about 2/3 full.
Bake about 20 minutes
FROSTING
Ingredients
4 tablespoons unsalted butter, room temperature
4 cups confectioner's sugar, sifted
1/4 teaspoon vanilla extract
6 ounces cream cheese, room temperature

Combine all ingredients in a bowl
using an electric mixer, beat until smooth
